How it all began

**Pizz'A Chicago: A Slice of Chicago in the Heart of Silicon Valley**


In 1991, two Chicagoans, Theo Reynolds and Art Harris, opened a small pizza restaurant in Santa Clara, California. They called it Pizz'A Chicago.


It was around 2:00pm on November 12, 1991 when Glen Campbell (yes, that is really his name) came to our Santa Clara restaurant for a beer. That was our very first customer and the official beginning of Pizz’a Chicago. Since then, we’ve made some wonderful friends, had lots of laughs and dished up a whole lotta pizzas. We made one mistake: we were too clever with our name “Pizz’a Chicago”. The Apostrophe was put in the word “Pizz’a” to indicate a slight separation so it would sound more like “piece of” Chicago! Instead of “Pizz’a Chicago” we are often called “Chicago Pizza”! Oh well! You can even call us “New York Pizza”, just as long as you call us! Our goal is to serve the highest quality gourmet deep dish pizza at a reasonable price, in a fun and interesting atmosphere. We hope that you find Pizz’a (as in piece of) Chicago a warm, friendly restaurant that you’ll enjoy coming back to time and time again. If not, well, we have ways of…shall we say…convincing you. 


Reynolds and Harris had both worked in the restaurant industry in Chicago, and they were passionate about bringing authentic Chicago-style deep-dish pizza to the Bay Area. Reynolds, who honed his skills in the Lettuce Entertain You restaurant empire, learned the pizza trade at Gino's East on Superior Street in the Windy City. Harris, a New Jersey native, was a longtime fan of Chicago-style pizza.They used only the freshest ingredients, and they made their sauces from scratch every day.


The dough is made with high-quality ingredients and is allowed to rise for at least 24 hours. The sauce is made with fresh tomatoes and herbs, and the cheese is imported from Wisconsin. The pizzas are baked in a Gas fired oven until the crust is golden brown and the cheese is bubbly and melted.


Pizz'A Chicago quickly became a hit with locals and tourists alike. The restaurant's deep-dish pizza was praised for its rich, flavorful crust and its generous toppings. Pizz'A Chicago also offered a variety of other Chicago-style dishes, such as Italian beef sandwiches and pastas.


In 1993, Pizz'A Chicago was featured in a Chicago Tribune article about the growing popularity of Chicago-style pizza in California. The article praised the restaurant's "authentic Chicago flavor" and its "friendly service."


Pizz'A Chicago has continued to thrive in Santa Clara for over 30 years. Pizz'A Chicago of Santa Clara remains a popular destination for pizza lovers from all over the Bay Area.
